{Recipe: Baked greek yogurt lemon pasta with sweet corn and the boy’s current obsession}

What to make for dinner..I looked into my kitchen cupboards and found a bag of this cool corkscrew pasta I got at Bite Grocerteria.

I was craving something creamy and comforting. I drew inspiration from this baked lemon pasta and adapted it to create a baked greek yogurt lemon pasta w/ sweet corn.

Preheat your oven to 375 degrees. Boil 2 cups of your favourite pasta in salted water. In a saucepan, saute about 3 cloves of chopped garlic in 1 tsp of butter and 1 T of olive oil. Add in 4 slices of genoa salami cut into small squares. Next, add in some fresh corn cut off the cob and the juice of one and a half lemons and 1 tbsp of dijon mustard. Add in about one and a half cups of greek yogurt (I use the full fat stuff, 11% M.F – the original recipe asks for sour cream) and the zest of two lemons. Season with salt and pepper.

Pour your cooked pasta into a 9×9 baking dish and pour over the sauce. Add about 1/4 cup of grated parmesan cheese, stir in one egg lightly beaten, 2 chopped scallions and mix till all the noodles are coated in the sauce.

Top with another 1/4 cup of grated parmesan cheese and seasoned breadcrumbs. Cover in foil and bake for about 15 min. Take foil off and bake another 7 min till golden brown on top, make sure it doesn’t dry out though.

All ready to eat..

This tasted awesome. Like a mix between a mac and cheese and a alfredo sauce. Rich, tangy and creamy with bursts of sweet corn in every bite. The perfect comfort food.

Because I’ve been telling you all about my favourite things, I thought I’d talk about the boy’s current obsession. It’s this little bottle of hot sauce he picked up at the Grizzly Paw shop in Canmore.

It’s called Alberta Crude and its made right here in Calgary(I think he was drawn towards this one since he works in the oil/gas industry).

The ingredients are as follows: Tomato Paste, Red Habanero Peppers, Jalapeno Peppers, Peri-Peri Peppers, Chipotle Peppers, Vinegar, Brown Sugar, Salt, Spices, Shallots, Garlic, Black Pepper, Oleoresin, Capsicum.

The boy bought the 2oz bottle ($5). The label on the bottle read: This sauce is VERY hot. Use at your own risk.

I tried just a little bit of this mixed with some ketchup on a french fry. GAH! This hot sauce is not for the faint at heart. The boy liked this so much that it has replaced his beloved sriracha rooster hot sauce! He’s been requesting I make dinners that accomodate his beloved little hot sauce.

So if you like spice, be sure to pick up one of these to add to your hot sauce collection.

  1. I just made this for lunch and it was delicious! My boyfriend really enjoyed it as well! I added some fresh tomatoes on top and next time I’m going to add in some veggies.
