{RECIPE- Truffled mushrooms and egg}
After my fabulous meal at CHARCUT a couple days ago, I’ve been craving a meal that involves truffle oil. Quick and easy, craving satisfied..
Mushroom & Egg ala Jen
- 5 button mushrooms
- 1/4 red onion
- extra virgin olive oil + 1 tsp butter
- fresh basil, dill and thyme
- 1 tb capers
- 2 tb goats feta
- splash of balsamic vinegar
- 1 egg
- salt and pepper and siracha
- drizzle of truffle oil
Saute onion in pan till translucent. add mushrooms + balsamic, cook till browned. remove from heat, add fresh herbs, capers, salt, pepper and truffle oil. Cook egg to your liking (mine was over easy), sprinkle with cheese and siracha. bon apetit.
